Tangy couscous salad

Ingredients
300g couscous or bulghar wheat
vegetable stock
2 courgettes
1 tbsp olive oil
100g feta cheese , crumbled
20g pack parsley , chopped
juice 1 lemon

Serves 4 as a side dish

Preparation and cooking times

Cook 10 mins

Vegetarian, Low-fat, Super healthy

1.Cook the couscous or bulghar wheat in vegetable stock according to pack instructions. Trim the ends off the courgettes, then cut into slices.
2. Heat a griddle pan or grill. Drizzle the courgette slices with oil, then season. Cook for 2 mins, then turn over and cook 1-2 mins more until softened and golden brown. Tip into a large bowl along with the cooked couscous or bulghar wheat, then mix through the remaining ingredients. Serve at room temperature.

Tangy salade de couscous

ingrédients
300g de couscous ou de blé bulghar
bouillon de légumes
2 courgettes
1 cuillère à soupe d'huile d'olive
100g de fromage feta, émietté
20g paquet de persil haché
jus de 1 citron

Pour 4 personnes en plat d'accompagnement

Les temps de préparation et de cuisson

Cuire 10 min

Végétarien, faible en gras, sain super

1.Cook l'couscous de blé ou bulghar le bouillon de légumes selon les instructions pour emballer. Couper les extrémités situées au large des courgettes, puis les couper en tranches.
2. Chauffer une poêle gril ou au gril. Napper les tranches de courgettes à l'huile, puis assaisonner. Cuire pendant 2 minutes, puis retourner et cuire 1-2 minutes de plus jusqu'à ce qu'ils ramollissent et brun doré. Astuce dans un grand bol avec le blé cuit couscous ou bulghar, puis mélanger à travers le reste des ingrédients. Servir à température ambiante.
