Steak au Poivre Verte
Steak au Poivre Verte
ingredients serves 4
50 g (2 oz) unsalted butter
15 g (1 full tbsp) green peppercorns
15 ml (1 tbsp) brandy
sea salt, freshly ground, to taste
4 steaks, 225 g (8 oz) each
Method
1. Liquidize the butter, peppercorns, brandy and salt until smooth.
2. Spread the flavoured butter on the steaks and grill under high heat until cooked the way you like them.
