Southern Fried Chicken Empty Southern Fried Chicken

For the chicken
2 skinless chicken breast portions
Drizzle Olive oil
Cajan spice from packet or mix: a teaspoon of each and put it in a jar:
Chilli powder
Cayenne pepper
Garlic powder
Allspice
Ground Coriander
Cumin
Ginger
Fennel
Dried oregano
Dried Sage

Wholemeal rolls, watercress and tomato to serve

Method
1. Cut each chicken breast into 1 cm strips and dust with the Cajun chicken spices. Leave to marinate for 10 minutes or so in the fridge.

2. In a large, non-stick frying pan, drizzle a little olive oil and cook the chicken on either side for 4 – 5 minutes until cooked right through.
