Crunchy Coffee Muffins
Crunchy Coffee Muffins
Ingredients
25g/1oz Wholemeal Flour
170g/6oz Plain Flour
55g/2oz caster sugar
2 tsp baking powder
½ tsp salt
1 egg - lightly beaten
P200ml/7oz milk
85g/3oz melted butter
4 desertspoons coffee (mixed with 2 desertspoons of water)
Makes 10-12
Here’s a basic muffin recipe which can vary as my mood takes and my cravings want. The secret of any muffin mixture is not to over beat but rather to bind the ingredients together, it only takes minutes.
Make these with coffee, chocolate or maple syrup all equally good, coffee can vary as per personal taste.
Method:
1.Sieve the Plain Flour and mix all the dry ingredients together, then add the coffee.
2.In a separate bowl combine the egg, milk, melted butter and mix gently into the dry ingredients. Do not beat.
3.Transfer to individual muffin tins and bake at 190˚C/375˚F or Regulo 5 for approximately 20 minutes.
4.. Serve hot or cold, dusted with icing sugar
