Blueberry Pancakes.

Ingredients

Serve 3 or 4 per portion, stacked up on plates topped with a knob of butter, a drizzle of maple syrup and some extra blueberries.

175g (6oz) self-raising flour
Half teaspoon bicarbonate of soda
2 eggs
150g (5oz) natural yogurt
150ml (1/4 pint) milk
100g (4oz) blueberries
Grated rind of half an orange
Little oil for greasing
Butter and maple syrup to serve, plus extra blueberries

Method

1.Put the flour and bicarbonate of soda into a large mixing bowl then add the eggs and yogurt. Slowly whisk in the milk little by little, whisking all the time until the mixture is smooth and frothy. Stir in the blueberries and orange rind.
2.Pour a little oil into a large non-stick frying pan, then wipe around the pan with a folded piece of kitchen towel. Heat up the pan then carefully drop large spoonfuls of the mixture into the pan, well spaced apart and cook until tiny bubbles begin to show on the top and the undersides are golden around the edges.
3.Turn the pancakes over with a non-stick egg slice or palette knife and cook the second side until golden.
4.Take these hot cakes out of the pan and keep hot in a folded teacloth while you cook the rest of the mixture in the same way, greasing the pan with the kitchen towel between batches.


Crêpes aux bleuets.

ingrédients

Servir 3 ou 4 par portion, empilés sur des plaques garnies d'une noix de beurre, un filet de sirop d'érable et des bleuets supplémentaires.

175g (6 oz) de farine à gâteau auto-
La moitié de bicarbonate de soude cuillère à café de
2 oeufs
150g (5 oz) de yogourt nature
150ml (1/4 litre) de lait
100g (4 oz) de bleuets
Zeste râpé d'une demi-orange
Peu d'huile pour graisser
Beurre et sirop d'érable pour servir, ainsi que les bleuets supplémentaires

méthode

1.Mettre la farine et le bicarbonate de soude dans un grand bol à mélanger, puis ajouter les oeufs et le yogourt. Verser lentement le lait petit à petit, en fouettant tout le temps jusqu'à ce que le mélange soit lisse et mousseuse. Incorporer les bleuets et zeste d'orange.
2.Pour un peu d'huile dans une poêle antiadhésive, puis essuyez autour de la poêle avec un morceau plié de torchon. Faire chauffer la poêle, puis déposez soigneusement grosses cuillerées du mélange dans la casserole, bien espacées et cuire jusqu'à ce que de petites bulles commencent à montrer sur le dessus et le dessous soit doré sur les bords.
3.Tourner les crêpes au cours d'une tranche d'oeuf non-bâton ou couteau à palette et faire cuire le deuxième côté jusqu'à ce que doré.
4.Take ces petits pains de la poêle et garder au chaud dans un torchon plié pendant que vous cuisinez le reste du mélange de la même manière, graisser la poêle avec le torchon entre les lots

Reminds me I have arecipe for blueberry and ricotta pancakes which are serioulsy yummy.
