INGREDIENTS

•1 Coconut Pie Crust
•4 granny smith apples, peeled and cored
•2 red apples, peeled and cored
•1/4 cup raw honey (not vegan, though I'm sure maple/golden syrup or the like would do)
•1 teaspoon celtic sea salt
•2 teaspoons cinnamon
•3 medjool dates, pitted, soaked 1 hour and drained
•1 teaspoon vanilla powder
•1 cup raisins
•2 tablespoon flaxseed, ground fine
METHOD
Prepare pie crust according to recipe and press into a pie plate. Dehydrate if desired.
Place 2 granny smith apples and 1 1/2 red apples, honey (or alternative), salt, cinnamon, dates, and vanilla in food processor. Process until mixture is almost the consistency of applesauce. Place mixture in a bowl.

Chop the 2 remaining granny smith apples into small pieces, the size of peas. Take remaining half of red apple and slice into thin slices that are then sliced in half. Mix all of the apples together and add raisins. The raisins will soak up the juice from the apples. Stir in flaxseeds and mix well.

Let mixture sit at room temperature or place in dehydrator for 1/2 hour.

Place apple mixture in pie crust.

May be topped with chopped walnuts
