Crushed pea fish cakes with chilli-lime mayo

Ingredients
500g floury potatoes , cut into chunks
175g frozen peas
300g trout fillets
knob of butter
plain flour , for dusting
2 tbsp sunflower oil

FOR THE CHILLI-LIME MAYO
4 tbsp mayonnaise
zest 1 lime , plus extra wedges to serve
1 red chilli , deseeded and finely chopped

Serves 4
Preparation and cooking times

Prep 20 mins

Cook 25 mins

1.Cook the potatoes in boiling, salted water until tender, adding the peas for the final 5 mins. Meanwhile, put the fish in a microwaveable dish, dot with butter, cover with cling film, then microwave on High for 3-4 mins until tender.

2. Drain the potatoes and peas, then return to the pan and mash well. Skin and flake the fish, then add to the mash and season. Shape into 8 cakes with floured hands and lightly dust with flour.

3. Heat the oil in a non-stick frying pan, then fry the fish cakes until crisp and golden, turning once. Mix the mayo, lime and chilli, then serve with the fish cakes, lime wedges and salad, if you like.

Crushed galettes de poisson de pois avec piment-lime mayonnaise

ingrédients
500g de pommes de terre farineuses, coupées en morceaux
175g de petits pois surgelés
300g filets de truite
noix de beurre
de farine, pour le dépoussiérage
2 cuillères à soupe d'huile de tournesol

POUR LE PIMENT MAYO-CHAUX
4 cuillères à soupe de mayonnaise
le zeste de 1 citron vert, plus des coins supplémentaires pour servir
1 piment rouge, épépiné et haché finement



Pour 4 personnes


Les temps de préparation et de cuisson

Préparation: 20 minutes

Cuire 25 min

1.Cook les pommes de terre dans l'eau bouillante salée jusqu'à tendreté, ajouter les petits pois pour les 5 dernières minutes. Pendant ce temps, mettre le poisson dans un plat allant au micro-, parsemer de beurre, couvrir avec du film alimentaire, puis à micro-ondes à puissance élevée pendant 3-4 minutes jusqu'à tendreté.

2. Égoutter les pommes de terre et pois, puis revenir à la poêle et bien écraser. De la peau et paillettes le poisson, puis ajouter à la purée et assaisonner. Façonner en 8 galettes avec les mains farinées et saupoudrer légèrement de farine.

3. Chauffer l'huile dans une poêle anti-adhésive, puis les faire frire les gâteaux de poisson jusqu'à ce que croustillant et doré, en tournant une fois. Mélanger la mayonnaise, de la chaux et le piment, puis servir avec les galettes de poisson, quartiers de lime et salade, si vous le souhaitez.

Good choice of fish. This also works with Sea Bass, Cod, Pollack. Haddock, Mackeral and Salmon.
