Roman Roast Kidneys
Ingredients
For two people
4 lambs kidneys
1/2 teaspoon freshly ground black pepper
2 tablespoons roasted almonds, finely chopped
1 teaspoon coriander
large pinch fennel seeds
2 tablespoons olive oil
2 tablespoons meat stock
4 rashers streaky bacon
Recipe
Skin and core the kidneys, then cut the kidneys in half lengthways but do not separate. Coat each open half with the chopped almonds, black pepper, coriander, fennel and meat stock and drizzle with a little olive oil. Close together the kidneys.
With the back of a knife, stretch each bacon rasher and wrap one rasher completely around each kidney and secure with a cocktail stick. Place the parcels on a baking sheet, drizzle with a little more olive oil and roast for 35 minutes in a medium hot oven.
