Riz au lait - Rice Pudding
Riz au lait (Rice pudding)
Ingredients
For the pudding
150g/5oz short grain or pudding rice
1.7 litres/3 pints full fat milk
100g/3½oz caster sugar
2 tbsp vanilla syrup (see Top recipe tip below)
To serve
50g/2oz icing or caster sugar
Preparation method
1. Preheat the oven to 150C/300F/Gas 2.
2. Rinse the rice in cold water to remove the dusty starch from the
surface – this will prevent the pudding becoming too thick.
3. Place the drained rice in a large saucepan with the milk, sugar and

4. Bring to the boil then turn the heat down and simmer very gently,
stirring every five minutes, for 25 minutes.
5. Simmer for five more minutes, stirring slowly all the time to prevent
the rice from sticking to the bottom of the pan.
6. Remove from the heat and pour into a shallow 2000ml/3½ pint
ovenproof dish.
7. Bake in the oven for 30 minutes and then leave to rest for at least
one hour - this will allow the creamy texture to develop.
8. Sprinkle the surface of the pudding with sifted icing sugar and serve
warm.
9. To serve cold, preheat the grill to its highest setting. Sprinkle the cold
pudding evenly with caster sugar, using a fine sieve, and place under
the grill for 2-3 minutes. Cool for 10 minutes then serve.

To make the vanilla syrup, dissolve 110g/4oz caster sugar in 100ml/4fl oz water in
a small pan and bring to a boil.
Let cool a little then add six vanilla pods, roughly chopped with the hard nibs at the end removed, and blend to a purée.
Store in an airtight jar in the fridge until needed – it will keep for months. This is delicious served with pears or peaches poached with vanilla.
Alternatively, you could put a layer of fruit
compote or jam in the base of the dish before you add the rice.

2 cuillères à soupe de vanille sirop (voir l'astuce recette Top ci-dessous)
Pour servir
Givrage 50g/2oz ou sucre en poudre
méthode de préparation
1. Préchauffer le four à 150C/300F/Gas 2.
2. Rincez le riz dans de l'eau froide pour enlever l'amidon de la poussière
surface - cela empêchera le pudding devient trop épaisse.
3. Placez le riz égoutté dans une grande casserole avec le lait, le sucre et
sirop à la vanille.
4. Porter à ébullition puis baissez le feu et laisser mijoter très doucement,
en remuant toutes les cinq minutes, pendant 25 minutes.
5. Laisser mijoter pendant cinq minutes, en remuant lentement tout le temps pour empêcher
le riz de coller à la partie inférieure de la cuve.
6. Retirer du feu et verser dans une pinte peu profonde 2000ml / 3 ½
plat allant au four.
7. Cuire au four pendant 30 minutes, puis laisser reposer pendant au moins
une heure - cela permettra à la texture crémeuse à se développer.
8. Saupoudrer la surface du pudding avec le sucre à glacer tamisé et servir
réchauffer.
9. Pour servir froid, préchauffer le gril à son réglage le plus élevé. Saupoudrer le froid
pouding uniformément avec le sucre en poudre, en utilisant une passoire fine, et de lieu dans
le gril pendant 2-3 minutes. Laisser refroidir pendant 10 minutes puis servir.

Pour faire le sirop de vanille, dissoudre le sucre en poudre dans 110g/4oz oz d'eau dans 100ml/4fl
une petite casserole et porter à ébullition.
Laisser refroidir un peu puis ajouter six gousses de vanille, grossièrement hachées avec les éclats de durs à la fin enlevés, et mélanger à une purée.
Conserver dans un bocal hermétique au réfrigérateur jusqu'à ce que nécessaire - elle permet de conserver pendant des mois. C'est délicieux servi avec des poires ou de pêches pochées à la vanille.
Sinon, vous pouvez mettre une couche de fruits
compote ou confiture dans le fond du plat avant d'ajouter le riz.

Now I have soemthing to make for pudding tonight. Only thinking the other day I hadn't had rice pudding in along while. What better way han to roadtest the recipe and quell my pangs of comfort food.

Its alittle too sweet for my personal taste. I remade another batch adjusting sugar and it was perfect. It is actually a very pleasant pudding.

Managed to cook it, fairly easy to follow. I thought it wasn't that sweet but the BF said it was for him. I didn't dothe vanilla thing, the pods are so expensive so added vanilla extract instead. Also added some dried raisins.s
