Cajun Rice Dressing Empty Cajun Rice Dressing

Ground Pork (1 pound)
Ground Beef (1 pound)
Eggplant (1 large chopped)
Onion (1 large chopped)
Bell Pepper (1 chopped)
Garlic (1 clove minced)
Cream of Mushroom (1 can)
Water (1/2 cup)
Cooked Rice (4 cups)
Cajun Seasoning and Hot Sauce

How to prepare Cajun Rice Dressing:

In a pot brown both the pork and beef ground meats well over med/high heat and then drain most (not all) of the excess fat. Now add in the onions, bell pepper, eggplant, and garlic along with a little Cajun seasoning to the meat and cook for approx 18-20 minutes or until all veg’s are tender. Now add in the water and cream of mushroom soup and cook on low heat for another 20 minutes uncovered and remember to stir often to prevent sticking. Now add in Cajun hot sauce and additional Cajun seasoning to taste and salt if needed , and add in the 4 cups of cooked rice and mix well.
