Cherry and Walnut Cake

Cherry and walnut Cake


200g/8oz Self Raising Flour
175g/6oz Margarine
175g/6oz Caster Sugar
60g/2 ½ oz Glace cherries
25g/1 oz Walnuts
3 Eggs
3 Tablespoons Milk

75g/3oz Icing Sugar
25g/1oz Roughly chopped walnuts
35g/1 ½ oz Halved cherries
Water or lemon juice to mix

Method:Cream margarine and sugar.

Add beaten egg and flour.

Finally mix in milk, chopped cherries and coarsely chopped walnuts.

Bake in a lined 2lb loaf tin at 160 degrees centigrade (320f/Gas mark 3) for 60 minutes.

Ice thinly some of the glace cherries and walnuts and then dribble remaining icing over.
