Serves 2

1kg live mussels cleaned and de-bearded
3 shallots finely sliced
4 cloves garlic crushed
100g pancetta lardons
100 ml Guinness
2 tbs flat leaf parsley chopped
1 tbs creme fraiche
black pepper

350g plain wholemeal flour
250ml buttermilk
1 tsp bicarbonate of soda
1 tsp salt
1 tsp sugar

1. Scrub and de-beard the mussels. In a pan large enough to fit all of the mussels, fry the pancetta until golden, add the shallots and garlic and continue cooking for 1-2 mins. Add the mussels and Guinness and cover with a tight fitting lid, steam for 4-5 mins.

2. Stir in the parsley and transfer mussels to a serving bowl with a slotted spoon, discarding any that aren’t open. Into the remaining liquor, stir in the creme fraiche and season with black pepper, then pour over the mussels.

3. Pre heat the oven to 200c, sift all of the bread ingredients into a large bowl, make a well in the centre and add the buttermilk, bring together with a wooden spoon, then turn out onto a floured surface adding more flour if too wet, knead for 30 secs, then shape into a ball.

4. Transfer to a greased baking tray and with a sharp knife cut a cross in the top. Bake for 30 mins then set on a rack to cool.
