Mozzarella stuffed chicken breast with crispy bacon Empty Mozzarella stuffed chicken breast with crispy bacon

Serves 4

Ingredients
4 medium chicken breasts
1 tsp parsley, finely chopped
4 slices mozzarella
2 eggs, beaten
100g flour
200g fine, fresh breadcrumbs
Salt and pepper
olive oil
4 slices bacon

Oven 160C

Method
1. Lay the breasts flat and make a horizontal cut in each to form a pocket. Roll a slice of mozzarella in chopped parsley, season well, and put into the pocket leaving a clear edge.

2. Brush the edges with some beaten egg and press the open sides together to seal. Turn in the flour then dip in the egg before rolling in breadcrumbs. Brown on both sides in some hot oil and then transfer to the oven and roast for 10 minutes. Serve with a slice of bacon

Can you use any cheese or does it have to be mozzie cheese?

Metling cheese works best than a hard cheese. I've also used soft cheeses like Brie, Ricotta and full fat soft cheses like Philedelphia.
