Mincemeat Cookies  Empty Mincemeat Cookies

Ingredients:


4 ½ cups of all-purpose flour.
½ teaspoon of baking soda.
2 cups of honey.
1 cup of vegetable shortening.
3 large eggs.
1 cup of mincemeat.

Directions:


Preheat your oven to 350°F (180°C).

Lightly grease 2 baking sheets.

Combine the flour and baking soda.

In a large bowl, beat the honey and shortening, then beat in the eggs.

Gradually blend in the dry ingredients, then stir in the mincemeat.

Drop the dough by spoonfuls 1 ½ inches apart onto the prepared baking sheets.

Bake for about 14 minutes, until lightly colored.

Transfer to wire racks and allow to cool

Luxury Mincemeat Biscuits part 2

Ingredients

Serves: 84

200g (7 oz) butter
300g (11 oz) caster sugar
3 eggs
1/2 teaspoon vanilla extract
400g (14 oz) plain flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
125g (4 1/2 oz) chopped walnuts
425g (15 oz) prepared mincemeat, drained


Preparation method

Prep: 20 mins | Cook: 10 mins
1.
Preheat oven to 180 C / Gas mark 4. Grease baking trays.

Cream butter, sugar and eggs together, then beat in vanilla. Sift the flour, salt and bicarbonate of soda together, and add to butter mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the prepared baking trays.


3.
Bake 8 to 10 minutes until light brown

Only issue I had with this recipe was they seemed a bit soft, As in more cake like than actual biscuit. Although I was having an off day that day, so may be this cook was off the boil and not the recipe.
